Eve.
Eleven am in the morning.
Thankfully, I had an early morning check up with the doctor so I could come back home in time to bake all kinds of things and hopefully make dinner too.
It depends on how much strength I have left once I’m done.
Right, I was currently mixing the cake batters that I had made from scratch.
“Okay.. I just need… I just need to start the ovens…” I muttered softly as I lightened both ovens before I began to flour the cake pans that I had bought a few weeks ago.
After much fuzzing, Jason had let me buy all kinds of appliances that I would be needing whenever I want to bake and I had gladly bought all kinds. I mean who wouldn’t spend when you have a black card?
I bought two round shaped ones, two star shaped ones and two heart shaped ones.
Instead of baking cookies and brownies, I decided to bake a variety of muffins and cupcakes but that would be later.
There are two mixers, the self stirring one and the handheld one. I was using the handheld one to make the cheesecake as the current batch would give three cakes while the self stirring one would make enough batter for four cakes. It was filled to the brim and I would have to transfer the mixture to a bigger bowl so I can finish it off with the hand mixer.
I was going to separate the batter so I can make two plains, one rainbow cake and a fruit cake.
The Chocolate cake would have to be mixed differently along with the red velvet cake I planned on making.
Yes, that’s a lot of cakes but it’s been a while since I’ve done something this productive and my baby seems to be enjoying the fact that I wasn’t just lazing around like usual so there has been no discomfort so far besides the smell of freshly baked batches of cake brings me to heaven.
Okay, enough of that sappy shit and let me get back to work.
“Okay, I just need to transfer the cheesecakes into the pans so I can start on the chocolate and red velvet cakes.” I mumbled softly to myself.
Thirty minutes later..
I had already placed the cheesecakes into the oven along with two plain cakes. I also mixed the fruit pieces that I had left to soak in black wine into one of the two batters so I could put it in the oven.
Nobody in Jason’s home can bake and yet they have two ovens?
It surprises me all the time.
The next batter was for the rainbow cake and I was currently mixing the food colouring in separate bowls with scoops of the batter.
I’ll make the muffins and cupcakes much later if there’s still time.
Right now, I have the self stirring mixer mixing the batter for the chocolate cake while I used the hand mixer for the red velvet cake.
The cheesecake would be done in about twenty minutes which means I had enough time to sit down and rest.
Ring! Ring!
Ugh!
Well, I got myself into this mess, I thought as I got back up to check on the cakes.
I turned the ovens off and opened the door before using mittens to move the cakes closer to the opening. I didn’t take them out because the difference in the temperature can cause them to deflate.
Forty five minutes later.
All the cakes were ready now and so I put them into the fridge.
I began to wash all the utensils and cleaned up the mess.
By the time I was done, there was still enough time and so I decided to make dinner too. I didn’t really like to be disturbed so I didn’t ask for help from the maids and I forbade Max, Mom and Grandma Nini from entering the kitchen.
I also asked them to tell Jason to stay put so I don’t snap at him if he comes to the kitchen but I highly doubt that he’s back from that darn press conference he’s been holding all week.
I was going to season the chicken and leave it to marinate for a while.
I used leg quarters instead of wings or drumsticks because…
I don’t know, more chicken for everybody?
I was going to bake fish too but the moment I brought it out of the freezer, I decided against that because I felt nauseous and being irritated doesn’t cook the food.
Haha.
I made sure to put some gloves on because, well.. personal hygiene.
I emptied the chicken into the steel pan before washing them under the sink. I made sure to clean the chunks of gut from the leg quarters before returning to the table where I dropped the pan down.
“Okay..”
“First is All purpose..”
I preferred to use all purpose than salt since it had salt, it’s spicy and has enough flavour.
I only use salt in pasta or rice or some other stuff that salt is extremely needed.
I continued to add all the ingredients and I grinned as I placed the green seasoning back down on the table. I don’t know who went grocery shopping but I’m glad the person knew to buy these West Indian spices or this meal would be lacking.
Like really lacking..
Then I mixed ketchup, bbq sauce, salt and mixed herbs into a small bowl filled with water and I stirred the content with a fork before pouring it all over the chicken.
I used my gloved hands to mix the seasoning into the chicken before turning around and washing my hands in the sink before covering the pan with film wrap.
Ten minutes later.
After getting rid of the chicken guts, in the sink, I placed the seasoned chicken in the fridge and washed the utensils that I had used to chop onions, garlic, thyme etc…
I was already getting tired but I was determined to finish this at once instead of resting and besides it was time for dinner yet.
It’s just six o’clock in the evening.
Wow, I guess baking does take a lot of time.
After a while, I removed the pan of marinated chicken from the fridge and then I emptied the contents into a glass pie dish.
I placed the pan in the sink before opening the cupboard and getting garlic powder along with black pepper which I sprinkled over the chicken.
Then I got the bottle of the BBQ sauce and coated the top of the chicken in it before putting the said bottle down. I grabbed the kitchen foil from its place in the drawer and without wasting time, covered the dish with it. I made sure to properly fold the edges before I turned to the stove so I could light it up and have it heated.
I was waiting for the oven to be sufficiently heated so I could put the dishes inside. And so I moved to the vegetables and began to cut and grate them.
Gathering the carrots, tomatoes, cucumbers, apples, sweet pepper, bell peppers, watermelon, cabbage and some long Chelle pepper, I washed them, grated them and cut them.
Fifteen minutes later.
I had already put the chicken dish into the oven and I was looking at the carrot bowl and another bowl filled with other ingredients.
The first bowl was for coleslaw and the Second was for fruits and vegetable salad.
I sprinkled some white sugar over the fruit and veggies salad before putting it back.
Then I grabbed Hellmann’s mayonnaise and spurted a good bit on the carrot, mixing it together before covering it up with foil and putting it into the fridge. It tastes better cold after all. I did the same with the fruits and vegetables salad.
Once I would think I was actually making food for a large crowd.
Well, it’s no guess that Jason would be bringing jade along with him so that makes me and my baby, Max, Ethan, Jason, jade, Grandma Nini, mom and Isaiah.
Jason asked me to talk to him at least once and since I’m in a good mood today, I thought, why not?
I peeled and boiled potatoes and yam with salt before cooking a huge pot of vegetable rice.
I was going to do a freaking corn pie but maybe next time.
After doing everything, I looked at the time and groaned.
Seven thirty seven…
I thought about making banana pudding since it tastes heavenly but I decided against it.
The moment I heard the ring go off, I knew the food was ready.
Fina-fucking-ally!
I remembered that I didn’t decorate the cake but right now, I was going to. We’re all gonna eat it like that.
The cakes were – strawberry cheesecake, two plain cakes, a rainbow cake, a fruit cake, a chocolate cake and a red velvet cake.
Wow, that’s a lot of cakes.
All I can say is, tonight’s dinner was amazing.
Everybody stuffed themselves so much I doubt if we would have any appetite to eat at Max’s wedding in a couple more days. After all, my cooking is better and that’s what I was trying to prove to Max who refused to let me bake his wedding cake.
